Raven’s Chai Latte | Spiced Loose Leaf Black Tea with Cinnamon & Cardamom

Masala chai is a household drink across South Asia rather than a flavor, and every family makes it differently. The one thing they agree on is that the spices go in the pot with the milk and the water together and get simmered, not steeped, which is worth trying at least once with this.

What's In It

Black tea for the backbone. Cinnamon, fast money and warding, and the first thing you smell. Ginger, fire and forward motion, the heat that comes up late. Cardamom, favour and sweetness, floral and unmistakable, and the note that separates a chai from a spiced tea.

Spiritual Properties

Worked with for courage and for warmth in a cold season. Cinnamon, ginger and cardamom are all fire-side spices in folk practice, which is why the cup reads the way it does.

To Brew

One tablespoon per cup. Black tea wants water just off the boil and three to four minutes, no longer, or the tannins take over and it goes bitter. Strain and take it with milk or without.

For a proper latte, put a tablespoon of leaf in a pan with half a cup of water and half a cup of milk, bring it slowly to a bare simmer, hold it there three or four minutes, then strain. Sweeten while it is hot.
