Passion Peach | Fruit-Forward Black Tea Blend

Fruit-forward and layered and a little indulgent. Peach comes through first, soft and familiar, then deepens with passionfruit and mango into something richer. Citrus keeps it bright and the black tea base gives it structure, hot or over ice.

This is the one built for sun brewing, which is worth doing properly at least once: a jar of cold water, the leaf, a lid, and three or four hours somewhere the sun actually hits it. The gentler extraction pulls less tannin, so it comes out rounder and sweeter than the same leaf brewed hot and chilled. Read the brewing note before you try it.

What's In It

Black tea, the anchor. Peach, passionfruit and mango for the fruit, layered so the peach arrives first and the other two come up behind it. Orange flower, lifting the heart and softening the edges. Elderflower, light and faintly honeyed on the finish.

Worked with for attraction, pleasure and following what feels alive rather than what feels expected. A summer cup, and a good one to make for someone else.

To Brew

One tablespoon per cup. Black tea wants water just off the boil and three to four minutes, no longer, or the tannins take over and it goes bitter. Strain and take it with milk or without.

For sun tea, a heaped tablespoon per pint of cold water in a scrupulously clean covered jar, three to four hours in direct sun, then strain and refrigerate straight away. Drink it within a day. Sun tea never gets hot enough to kill anything, which is the whole reason for the short window, and the fruit sugars in this blend make that window matter more than it would with a plain black tea. If it ever looks thick, ropy or syrupy, pour it out.
